Dave’s Biography:
David grew up in Anchorage, Alaska and was a standout prep athlete in cross-country running, track and field, and ice hockey. He moved on to become a NCAA Division II Track and Field athlete at Adams State College where he received a degree in Human Performance and Physical Education with a minor in Coaching. Immediately following graduation, David was offered three varsity head coaching positions in his home town for cross country, track and field, and ice hockey. While coaching, David began training for his pro MMA career with his first fight in 2006. Since then, he has earned a Brazilian jiu-jitsu purple belt, a semi pro boxing record and fought main event on pro MMA cards in Alaska and Canada.
David now resides in Las Vegas, Nevada where he is an active pro fighter. Along with his own training, David is committed to using the knowledge he acquired through formal education, coaching and personal experience as an elite athlete to assist others achieve their fitness and performance goals.

MIKE SMITH: started boxing at 15 years old at the Bed–Stuy Boxing club in Brooklyn, New York. He was trained by the legendary east coast trainer, George Washington. After serving in the Army (Desert Storm Vet), he became a trainer at Gleason’s Gym in Brooklyn. He coached New York area fighters for national and international competitions. Mike has also trained many pro boxers (Ronica Jeffrey 3-time female Golden Glove Champion) and has worked with members of Team Renzo Gracie Daniel Gracie, Jamal Patterson, Igor Gracie, Gregor Gracie, and Rolles Gracie. He also has helped UFC fighter Matt Brown and many other MMA fighters looking to better their stand up. He currently teaches all boxing instruction at Wand Fight Team in Las Vegas and is a vital part of the amateur and professional mma coaching team.
PETER SIMONE: Currently a brown belt in Brazilian Jiu-Jitsu, Peter began his jiu-jitsu training in 2000. Originally from New York, he served as an instructor within the New York based Gracie Barra Academy for several years. Throughout those years he co-taught the adult program as well as led the instruction for the children’s program.Recently relocating to Las Vegas, he became a member of Wand Fight Team’s Professional MMA Team. Having been recognized for his technically understanding and skill, he serves as an instructor within the academy in grappling, BJJ and MMA. Additionally, having received a NY state teaching certification, he serves as the head instructor within the children’s BJJ/MMA program at Wand Fight Team. He currently holds a record of 2-0.

MMANEWSLEAK EXCLUSIVE: Welcome back to another installment of the health and wellness with The Baked Chef™. Since it is the holiday season and some of us are watching our weight, I decided that I would help you cook a healthy Christmas meal to share with your family and friends - Pork Tenderloin. Enjoy and come back for more.
Seared and Roasted Pork Tenderloin
2 Pork Loins
3 tbl lemon pepper seasoning
1 tbl black pepper
1 large onion, diced
1 handful baby carrots
2 cloves of garlic, sliced
6 oz brocolli crowns, washed
1-2 ea serranos, sliced
16 oz chicken stock
1 tbl salt
1 tbl black pepper
2 tbl Red Pepper Flakes
Herbs (Rosemary, Sage, Thyme, etc.)
Rub pork tenderloin with the mixture of lemon pepper and black pepper.
Allow to marinate in the refrigerator for 1 hour in plastic wrap or a
bag prior to cooking.
Preheat oven to 350 degrees.
Turn a skillet on to high and spray with a little cooking spray. Sear
the meat on all sides. Take off heat. In a large mixing bowl combine
all the vegetables, red pepper flakes, salt and pepper. Place at the
bottom of a 13×9 baking dish. Pour the chicken stock over the
vegetables. Place herbs on top of vegetables in the center of the
pan. Place a wire wrack (even the rack from most microwaves will
do) atop the baking dish and lay the pork loins on top. Bake at 350 degrees
for 35-40 minutes until a thermometer inserted into the center of the
tenderloin reads 140 degrees for 15 seconds.
Allow the meat to rest out of the oven for five minutes before cutting into it. Slice meat and serve with the vegetables and “sauce” from the bottom of the pan. ENJOY!!
Optional:
Boil a few potatoes and mash with salt, pepper, and skim milk. Put a
scoop of potatoes on the plate and serve the pork, sauce and
vegetables on top!
